I'm A Little Overwhelmed

It's that time of year again. The garden is booming. Everything is getting ready to be picked. My father in law brought me two 5 gallon buckets of beans and we picked about three 5 gallon buckets of squash. My husband's grandma came to help me snap the beans yesterday. We sat there and snapped beans for about 2 hours while the kids ran amuck. This morning my mom came over to help me jar all of our beans. Neither of us has ever done this before so Nanny came back over to help us. She is about 80 years old and she just scoots around telling us exactly what we need to do. I wouldn't have it any other way. I tell her I'll do all the work if she will just tell me what to do. So, she obliges me. She is so funny. I'll turn the burner on and she'll turn it just a hair up or down. It's got to be JUST right. I'm so happy to have her around to show us how to do all of these things. Jarring is very intimidating because of the pressure cooker. But, really it's not that bad. Here's a shot of the pressure cooker.



Anybody can set a cooker on the stove and take a picture to pretend like they are really doing it. So, I made it into a movie. That way there is evidence that I was really pressure cooking.

Then there is the squash. We will be slicing it, blanching it and putting it into freezer bags. That will be the easy work. Although, I'm not sure you can tell from that picture how much there is. There's A LOT.

Let's just say I have it coming out of my ears.

That squash barely touched my ears and will be included in the baggies to go in the freezer. If any germaphobes out there have a problem with that, the next time you come by for dinner, pass on the squash.

(Gosh, that sounded really cranky, sorry, I'm a little tired. I will try to stop calling people names. Maybe.)

If you have any veggies that you don't want?? I want them. I'll even come get them. It's good that the garden came in before yalls vacation! I didn't know you were so domestic! I am very proud of you. You've done good. I've got a wonderful pressure cooker that I don't use very often. I need too.

Boy does that post make me miss the south... you would never get a harvest like that here in the mountains of Colorado!!! I also love seeing all the gigantic green trees in your window. The south in the Spring - nothing like it! Also, I'm very impressed with your canning skills and your patience.

Oh my gosh. Those look soooo yummy!!!! Wish I was there to come help you eat them sometime! I want to learn how to can stuff. You are so nifty!!! I want to be nifty!

Wow! That lot looks amazing. The nearest I get is picking all the blackberries in the local hedgerows and spending ages freezing them on trays. Nothing like free food!

I would love to learn how to do all that stuff, more importantly I would love to love veggies, so that I would then love to can and freeze...I'm so picky it's terrible.

that pressure cooker movie was really tense. you should turn it into a feature length. y'all great for jarring stuff like that - almost zero food miles. you should pat yourselves on the back. i wish my grandma was still around to pass on stuff like that...

thank you for the great pictures! we have just come to the last jar of our apple chutney made last november. no matter how many jars are made, do you find there's never quite enough to last out the year?!

I love to can. But because our weather is different here we can not do as much. Our garden is just peaking out of the ground. I love to make homeade canned salsa. Yummy. Jelly is my kids fav. Stuffed banana peppers are my husbands fav. Picked garlic is my father in laws. We do BBQ sauce, salsa, tomato juice, tomato sauce, peppers, hot pepper mustard and much more. Hey a few years ago a lady told me to make hot pepper jelly. sound yucky but I did and then I read on the internet take a pack of cream chese and form a bowl out of it and fill it with pepper jelly (put a little knife on the side). serve with Ritz crackers. WaLa. Your dip is made.
